Savory waffles are a thing of mystery and enchantment!  We’ve created a savory waffle using a local ingredient…New Mexico Green Chiles.  It’s a light presence in these savory waffles. Just a “hint” of chile not heat but great flavor!  Guests will top them with both sweet maple syrup or with their eggs for a full savory breakfast dish.  We love these waffles!   We hope you do also!  We often include them in a dish with smoked pulled pork, eggs, and tomatillo salsa.  A recipe you’ll also find here on our website.

Total Time: 25 Minutes
Servings: 5 - 6

Ingredients:

  • 1 1/4 cup(s) all-purpose flour
  • 1 ¼ cup corn meal
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon(s) salt
  • 2 large eggs
  • 1 1/2 cups (12 oz) buttermilk
  • 4 oz canola oil
  • 1 tsp Apple Cider Vinegar
  • ½ cup shredded Monterey jack cheese
  • 1/2 cup(s) chopped roasted green chile

Instructions:

  1. Combine dry ingredients Set aside.

  2. Mix wet ingredients and add to dry ingredients.

  3. Fold in cheese and green chile.

  4. Heat a waffle iron and make waffles, using about 1/2 cup batter per each one. Keep warm in 200°F oven, if desired.

  5. Top with egg or serve egg on the side.
